Related to pears and apples this bumpy, yellow skinned downy fruit has hard yellow/white flesh which cannot be eaten raw. Quinces ripen once picked and change colour from green to yellow as well as softening. Choose green fruit and ripen at room temperature at home or choose yellower fruit for immediate use. Despite appearances quinces bruise easily so transport and store with care.

Using

Quinces needed to be cooked before use. They can be baked or boiled in liquid such a sugar syrup and spices, wine and other flavourings or cooked slowly without liquid to make quince paste. They are good with cheese, apples, pears, pastry and duck.
