A dessert for when you are trying not to eat dessert. This is really delicious and my kids love to make, cook and eat this. Substitute other fruit for plums adjusting stevia level accordingly.
10 plums, cut into large pieces (seeds removed)
2 tbspns stevia (natural sugar substitute)
1 cup coconut flour (We love Aclara coconut products)
1/2 cup dessicated coconut
1/2 cup rolled oats
100g coconut butter
1 tbspn stevia (natural sugar substitute)
Place plums and stevia in a saucepan and cook over low heat until semi soft.
While plums are cooking mix crumble topping ingrediants together in a bowl. Rub coconut butter into mixture until mixture resembles coarse breadcrumbs.
Preheat oven to 180C.
Remove plums from heat and place in 15-20cm round baking dish. Top with crumble mixture. (You can prepare the crumble up to this stage in advance.)
Bake crumble for approx 20 mins until top is lightly browned.
Serve with your choice of icecream, yoghurt, or cream.
