Pineapple and Coconut Frappe

I am loving pineapples at the moment, as they are available all year we take them for granted.  This is really delicious the lime cuts through the sweetness of the pineapple. This dairy free drink perfect for breakfast or add a good quality white rum and make it a cocktail. You could also add a little ginger or mint.

Ingrediants

1 pineapple skin removed and cut into large chunks (discard core)

2/3 cup Coyo yoghurt (plain or flavoured or subsitute your favourite yoghurt)

Juice of 1 lime

2 good handfuls ice

Flesh of 2 passionfruit

Method

Blend all ingrediants except passionfruit using a barmix or food processor until smooth. Taste and add a more lime juice or ice as neccesary. Stir in passionfruit  and serve.
