Celeriac Salad

I love getting my salad fix from slawish salads in winter. I love this salad with jerk chicken, fried chicken or sausages. I would highly recommend a mandolin for this recipe unless your knife skills are exceptional.

Fregola & Heirloom Carrot Salad

Fregola is fun change from couscous, very easy to prepare, great for entertaining as is cooked and cooled in advance. You could substitute the carrots for another root vegetable.

I love my mandolin! There are so many combinations of raw finely sliced and diced vegetables that make the most delicious salads and are great for the cooler months. You can use normal beets I like the colour of the different beetroot and golden and target beetroots colour doesn't bleed. I love this served simply with a fried fish fillet.

Roast Cauliflower, Quinoa, Almond & Black Garlic Salad

Good warm or at room temperature, quinoa could be substituted for cous cous or you could remove the grain element all together for a delicious side. Great with pan fried fish, chicken or steak.

DIY Tuna Rice Bowl

This recipe is a family favourite. Its super healthy but also kids love this as they can help chop and grate all the components. You just place all the components in small bowls on the table then add what you want to your rice bowl, allowing kids a range of vegetables to choose from really helps increase their affection for vegetables!
