This is a delicious, healthy and super easy to make. It has no added sugar, dairy, oil or butter or eggs.
Preparation time 10 mins, plus soaking and cooking
Makes 12 slices
Ingredients
100g dried apricots, cut into small pieces
100g dried figs, cut into small pieces
200g good quality sultanas (we suggest tabletop sunmuscats)
1 apple, we suggest a pink lady
2 oranges
2 tbspns brandy
100g wholemeal flour
2 tspns baking powder
50g almond meal
1/2 tsp cinnammon
1/4 tsp ground nutmeg
Method
Zest one of the oranges, then juice them both. Place dried fruit in a bowl and add juice and brandy. Cover and heat in the microwave for approximately 2 minutes until liquid is hot and dried fruit has plumped up, or heat in a saucepan. This step can be done in advance the more time the dried fruit soaks the better.
Preheat oven to 170c and grease and line a medium sized loaf tin.
Mix together flour, baking powder, almond meal, spices and zest.
Add apple, dried fruit and liquid and mix to combine, mixture should be moist enough to hold together. If not add a little water.
Place mixture in the loaf tin and bake for approximately 45 mins until a skewer comes out clean.
Remove from oven, leave in pan until slightly cooled then remove.
Delicious hot, warm and cold.
