This is a delicious very simple pudding that can be made with any stewed fruit. Just stew enough fruit to cover half the bottom of a 15-20cm diameter baking dish (ceramic or glass). The key is making sure the fruit is hot when you add the topping, you can cook in advance and reheat just before cooking.
Preparation time: 15 minutes plus cooking
Stewed fruit enough to cover half the bottom of the baking dish (approx one kg), stones removed cut into pieces.
1/2 cup caster sugar
125g plain flour and 2 tspns sifted baking powder sifted
Preheat oven to 180C. Cream butter and sugar, add egg and beat well. Fold in flour. Grease baking dish and add fruit, top with cake mixture and bake for 3/4 hour until top is golden and cake bounces back when you touch it. Serve with icecream or cream.
