Preparation time 20 mins.
This method can be used with other stone fruit. You could also omit the thyme and add a cinnamon stick or cloves.
6 ripe nectarines, yellow or white
75g icing sugar
75g caster sugar
35g unsalted butter, melted
1-2 tbpsns liquor, such as frangelico
1 tspn fresh thyme leaves
To serve vanilla iceacream or yoghurt
Preheat oven to 180C.
Grease a small baking dish that can just fit the fruit.
Halve nectarines and remove stones
Combine sugars, vanilla pod, thyme, butter and thyme pour over nectarines.
Bake for 15 mins or until fruit is soft but still keeps its shape.
Serve hot, warm or cold with icecream, cream or yoghurt. Eat any leftovers with muesli and yoghurt for a delicious breakfast.
