Cabbage and Parmesan Salad

Preparation time 5 minutes

Serves 4

Even though cabbage is not my favourite vegetable I love this salad. It’s easy, crisp and fresh alternative to a green salad. Great with roasted or grilled meats I love it with a simple steak.

Ingrediants

Half a savoy cabbage, washed and finely shredded (preferably using a mandolin)

Approximately 2 handfuls shaved parmesan

6 tablespoons olive oil

2 tbspns red wine vinegar

1 tspn seeded mustard

pinch sugar

salt and pepper to taste

Method

Mix vinegar, oil, mustard, sugar and salt and pepper in a small bowl. Add cabbage to large bowl mix in dressing gradually (you can use more or less to taste ratio of oil to vinegar is approx 3:1). The idea is that the cabbage is not drenched in dressing!

Add parmesan to taste (more or less as desired). Done!
