I love getting my salad fix from slawish salads in winter. I love this salad with jerk chicken, fried chicken or sausages. I would highly recommend a mandolin for this recipe unless your knife skills are exceptional.
1 celeriac, finely sliced on a mandolin
2 baby fennel bulbs, finely sliced on a mandolin
4 spring onions, finely sliced
1 cup good quality mayonnaise (either homemade or we suggest Roza’s)
2 tbspns hot sauce (we like new Capital Hotsauce made in Canberra)
8 small cornichons finely chopped
Juice of 1 1/2 lemons
Mix mayonaise, lemon juice, hot sauce and gherkins in a bowl.
Add celeriac, fennell and spring onions and mix. Slice celeriac just before adding to dressing so it doesn’t discolour.
Taste for seasoning, add extra hot sauce or lemon juice if desired.
