This is a delicious and simple dessert.
Preparation time 10 minutes.
1 pineapple (tops on or off ask your greengrocer for advice)
2 tablespoons butter
1/2 cup caster sugar
small handful of mint leaves finely chopped
1 1/2 tbspn water
1 1/2 tbspn dry sherry (or use all water)
Cut skin off pineapple and then slice lengthwise into eight pieces around core. Discard core.
Heat a large frypan over high heat. Add butter and heat until just melted (do not burn or brown). Add pineapple to pan and sprinkle with sugar. Cook for approx 4-5 minutes each side until golden brown.
Remove pineapple from frypan and add water and sherry, cook until liquid is simmering (1-2 minutes) and slightly reduced.
Serve pineapple with icecream, cream or yoghurt and drizzle syrup over pineapple. Top with a few finely chopped mint leaves.
