Preparation time: 5 minutes
When stonefruit are in season use any which way I say. I love this salsa with a simple pan fried pork steak, chicken or duck breast with a salad to accompany.
2 ripe but not too soft yellow nectarines finely diced
3/4 spring onion very finely chopped
half a lime juice squeezed
pinch of salt
pinch of sugar
3 basil leaves finely shredded
Mix all ingredients together. Taste for balance. Leave for 15-2o minutes for the flavours to develop.
