1 pkt linguine we suggest Bellata Gold
Olive oil – suggest lemon infused La Barre or LiraH
1 jar sun-dried tomatoes – suggest Market Grocer 240ml jars
or 1 tub cherry tomatoes halved
½ tub (approx) Olivfresh Mixed Olives
200gm Feta – suggest Hindmarsh Marinated Feta
Grana Pandano grated, to taste
Juice of 1 lemon or to taste
Few sprigs dill
Salt and pepper to taste
Cook pasta as per instructions on packet. Drain.
Roughly chop sun-dried tomatoes or halve cherry tomatoes (or use both)
Roughly chop feta
Heat good splash of oil in fry pan
Toss tomatoes and olives in pan for few minutes to heat.
Add all other ingredients, including drained pasta, reserving dill to garnish.
Taste and add more lemon juice, oil, grana pandano, salt or pepper to taste.
TIP: Almost any ingredient can be used eg: chicken, canned tuna, sun-dried capsicum in place of sun-dried tomato.
