This is a vegetarian take on the classic rockmelon, cheese and proscuitto salad. So easy and quick and delicious when rockmelons are rocking. You could wrap also wrap the rockmelon wedges in proscuitto slices for a classic Italian pairing. Serve as a starter or as part of an Italian banquet.
1/2 a large rockmelon seeds and skin removed and cut into 5cm wedges then large chunks
4 handfuls rocket (you can use bunched or loose rocket depending upon preference bunched has a stronger flavour)
two handfuls of marinated feta (we love Calender marinated feta, marinate your own or use regular feta then add 3 tbpsns good quality olive oil)
2 tbspns malt vinegar
ground pepper and salt to taste
Dress rocket with vinegar and mix with marinated feta a little olive oil and salt, mix and plate. Top with rockmelon wedges and grind pepper over to taste.
