Types

There are two main types of limes available in Australia: Tahitian and Mexican Limes. Kaffir limes are a very knobbly lime whose skin and leaves are used in savoury Asian cooking. Limes are older than lemons orginating in Asia and contributing to the evolution of lemons.

Selection, Storage and Availability

Select firm, green skinned fruit. Keeps well at room temperature or in the fridge. Australian limes are available all year but fruit is more plentiful and cheaper in autumn-winter.

Uses

Use in sauces, dressings, drinks, sorbets, icing and desserts and in Asian cooking . Try juice and finely grated skin of 2 limes added to sugar syrup and pour over fresh fruit salad – yum!

Similarly to lemons limes are rich in Vitamins and minerals, including Vitamin C, calcium, phosphorus and potassium.
