Types

Sweet corn can be yellow, white, or a combination of yellow and white. Look for ears with husks that are fresh, tight and green, not yellowed or dry. Baby corn which is used in Asian cooking is generally imported from Asia.

Selection and Storage

Peel back part of the husk to see if the kernels are bright, plump and milky. and sold husked and packaged, look for fresh looking corn and check the packing date. Store corn in the refrigerator, remove the husk just before using so the corn does not dry out.

Availability

Available corn is available all year round but peak season is summer.

Using

Corn can be grilled, barbequed or roasted in the husk or with the husk removed. Corn can also be steamed, pan-fried, or boiled whole, half or in kernels. Corn is good with butter, bacon, capsicum, coriander, chicken, crab and cumin.
