Originating in China lychees or (litchi) are related to the rambutan and longan. They have a prickly, crackly pinkish shell and grow on small trees. The flesh of the lychee is sweet and fresh and often served to refresh at the end of a Chinese meal. Where possible choose Australian lychees with a firm fresh looking skin, lychee’s become dull when they have been in storage too long. Store in a plastic bag in the refrigerator.
