Nectarines are a variety of peach with a firmer flesh, skin without the downy quality of peaches and a distinct flavour. Many types of nectarines are grown in Australia but commercially the only distinction is between yellow and white. Choose unbruised nectarines with a nice blush and shiny skin. Store in the refrigerator until ripe and ready to eat. Available November-April.
